My husband says it's not good cooking unless it's made from scratch. This is an old-fashioned way of making coconut pie from scratch. —Barbara Smith, Franklin, Georgia
Old Fashion Coconut Pie
° 1 1/2 cups cream
° 1 1/2 cups coconut milk
° 2 eggs, beaten
° 3/4 cup sugar
° 1/2 cup starch
° 1/4 teaspoon salt
° 3/4 cup stripped coconut
° 1 teaspoon vanilla
° 1 prepared biscuit mixture
° 3 egg whites
° 1/4 teaspoon cream of tartar
° 6 tablespoons of sugar
° 1/2 cup stripped coconut
Bearing:
Consolidate creamer coconut milk, eggs, 3/4 cup sugar, cornstarch, and salt together in a pan; mixing continually, and bring to a sluggish bubble over low hotness and cook until thick, around 30 minutes. Take the pot off the fire. Add 3/4 cup of coconut to the blend alongside the vanilla concentrate. Empty the coconut blend into the prepared pie outside. In a glass or metal bowl, beat the egg white until foamy. Progressively add the cream of tartar and 6 tablespoons of white sugar, and continue to rush until delicate pinnacles structure. Spread the egg white combination over the pie. Sprinkle a large portion of a cup of coconut over the pie. Heat at 350 for 12 to 15 minutes.
